Ice Cream Making

Our scooped ice cream is handcrafted on-site, one 2 1/2 gallon batch at a time, using a high butterfat content which makes our ice cream so creamy and flavorful. We proudly use milk, creams, and maple syrup supplied by local New Hampshire Farms and we demand from our purveyors the finest fruits, nuts, candies and chocolate available. Any substitutions would compromise the quality of our ice cream!

Ice cream making is both fun and rewarding but it can also be a lot of work. There are many factors, such as temperature and timing, to consider with every flavor and every batch of ice cream.

Arnie's Place Ice Cream Steps

  1. First you need to get your ingredients together. This preparation time varies depending on the flavor being made (Vanilla is easy, Extreme Chocolate takes a while, as we have to stir together the cocoa with the other ingredients , etc...)
  2. Once the ingredients are poured into the batch freezer, it takes 9 to 15 minutes (again, depending upon the ingredients and how they affect the freezing point of the mix) to turn the mixture into something resembling ice cream.
  3. The semi-frozen (about the consistency of soft serve...) ice cream is then removed from the machine and placed into 2 1/2 gallon containers. We then cool it in a hardening cabinet at -25° Fahrenheit for at least 12 hours. This fast freezing reduces the chance that ice crystals will form which helps keep our ice cream so smooth and creamy.
  4. After hardening, the ice cream is extremely hard and impossible to scoop so the ice cream gets moved into a storage freezer. It remains there to temper for about 3-6 hours before it's ready to serve at about 5°Fahrenheit.
